Ingredients
- 1 cup Anchor Cheese grated
- 1 tbsp of Anchor butter
- 1 cup fresh lobster
- 1 tsp garlic
- 1 tsp grated lemon rind
- 1/2 tsp paprika
- 1/4 cup chopped red onion
- 1/4 cup chopped tomato (optional)
- 4 slices grilled crispy bacon
- 2 tbsp tarragon
- 1/4 cup green onion/chive
- 60 phyllo cups
- Pinch of coarse black pepper or chili flakes
Directions
- Stir fry garlic, lobster and butter in a pan until lobster is tender and mixture is smooth, then let cool
- In a mixing bowl, add all the ingredients except the green onion, tarragon and phyllo cups
- Grill lean bacon till crispy and let cool, then crumble
- Once the lobster mixture has cooled, add to the bowl of ingredients and mix to form a paste
- Teaspoon the mixture in each phyllo cup
- Top with bacon bits, tarragon and green onion
- Refrigerate for 20 min and serve!
