Savory Ham Muffins

Ingredients

  • 2 cups                                                flour
  • 4 teaspoons                                      baking powder
  • 1/2 teaspoon                                    salt
  • 1/2 cup                                              finely chopped ham
  • 1 cup                                                  grated Anchor Cheddar Cheese
  • 1/4 cup                                              finely chopped mushrooms
  • 1                                                          small red sweet pepper, finely chopped
  • 1 tablespoon                                     chopped chives
  • 2 tablespoons                                   chopped pimentos
  • 4 ounces                                            Anchor Unsalted Butter, melted
  • 1 cup                                                   milk
  • 1                                                           egg, lightly whisked
  • Garnish                                              parsley and chopped chive

Directions

  1. Preheat the oven to 400 degrees (Fahrenheit). Grease a 12-cup muffin tin
  2. Combine the flour, baking powder, salt, ham, Anchor Cheddar Cheese, mushrooms, sweet peppers, chives and pimentos in a large bowl and make a well in the center
  3. Pour in the Anchor Unsalted Butter, milk and egg. Mix until combined. Spoon into prepared muffin cups
  4. Bake for 12-15 minutes until golden brown and firm to the touch. Remove from tins and garnish
