Ingredients
- 4 Cups of Grated Anchor Cheddar Cheese
- 1 Cup of Anchor Butter
- 1/4 Cup of Anchor Cooking Cream
- 1 Cup Walnut chopped very fine (use chopper; chop until very fine)
- 3 Tbsp. Dijon Mustard
- 1 Tsp. Salt
- 1/2. Tsp. Black or white pepper
- 1 Tsp. Turmeric Powder (for yellow color)
- 1 Tsp. Paprika (for red color)
- 2 large Garlic Bulbs (remove excess outer skin and cut tops about ½ inch off)
- 6 Mini Sweet Peppers different colors (cut off tops of peppers remove seeds)
- 2 Pimentos (cut top off and remove seeds)
- 2 Tbsp. Anchor Butter
- 2 Tbsp. Olive Oil, Coconut or Vegetable oil
Directions
- Foil for Roasting Garlic and Peppers. Combine, Garlic and Peppers together with 2 Tbsp. Anchor Butter and 2 Tbsp. Olive Oil pinch of Salt and Black Pepper
- Wrapped like a package closing the top, put onto tray and bake at 360 degree for about 30 to 40 min. You can also use Clay pot with cover to roast garlic, peppers. When finished, cool and squeeze to remove garlic. Add Garlic and peppers together with the oil and juices in chopper until it looks like a paste
- Cream Butter and Grated Cheese together. Add Anchor Cooking Cream. Mix until Creamy, about 3 min. Add Roasted Garlic and Pepper Paste and mix until well blended together. Add Salt and Black Pepper, Dijon Mustard, mix in ground Walnut, mix until all comes together to make a paste
- This is finished, ready to make Sandwiches or use as a dip with Crackers. You Can divide into 3 Portions for different Colors to make layers. This can be used for about 2 Sandwich loaves. Depends on how much you paste onto your slice
- Add 1 Teaspoon Turmeric Powder to 1 portion to make Yellow Color
- Add 1 Teaspoon Paprika to 1 portion to get a light Red Color
- Assemble your Sandwiches with two or three layers and cut to your liking.
- Roasted Garlic, Peppers, and Walnut Cheese Paste Makes an Awesome Dip!
- I Made a lot, but you can make 1/2 the recipe just cut all ingredients in half
- I freeze half of this Cheese Paste for another time. This may seem like a lot of work, but you can make the garlic and peppers and walnuts the day before
