Ingredients
Stuffing
- 1 tbsp. oil
- 3 tbsp. chopped onions
- 1 oz. Anchor Salted Butter
- 4 oz. breadcrumbs
- 1/4 tsp. salt
- Big pinch black pepper
- 3/8 tsp. garlic powder
- 1/2 tsp. dried mixed herbs
- 1/4 tsp. sugar
- 1 egg
Marinade
- 1/2 tsp. black pepper
- 3 tsp. salt
- 3/4 tsp. brown sugar
- 3/4 tsp. garlic powder
- 3/4 tsp. onion powder
- 1 1/2 tsp. paprika
- 3/4 tsp. thyme leaves
- 2 oz. Anchor Salted Butter, softened
Directions
Stuffing
- Sauté onion in oil, add Anchor Butter. Let it melt and set aside to cool.
- Mix breadcrumbs with salt, black pepper, garlic powder, herbs and sugar.
- Beat egg thoroughly and add to the breadcrumb mixture.
- Add the sautéed onion and mix well.
Marinade for Chicken
- Preheat oven to 425°F.
- Rinse chicken thoroughly and pat dry with paper towel. Rub Anchor Salted Butter all over the chicken.
- In a small bowl, mix all seasoning ingredients. Rub chicken inside and out with spice mixture.
- Fill the cavity of the chicken with the breadcrumb stuffing and truss the chicken with string.
- Place chicken on a roasting pan and put into the pre-heated oven. Turn the heat down to 400°F.
- Bake uncovered, breast-side up for 1 hour and 20 minutes until done. Cover chicken with foil for at least 10 mins. Carve and serve.
