Macaroni Fish Pie

Ingredients

Marinate Fish

  • 3/4 lb White Fish, cut in cubes
  • ½ lime and flour to coat fish
  • ¼ tsp grated ginger
  • 1 tsp grated garlic
  • 1 tsp chopped lemon thyme
  • ½ tsp black pepper
  • 1 tsp Bajan seasoning
  • Salt and pepper to taste

Fish Stew Ingredients

  • 3 tbsps vegetable oil
  • 1 medium onion chopped
  • ½ tsp garlic and ginger paste
  • 3 tbsps chopped lemon thyme
  • ½ scotch bonnet paper
  • 1 medium tomato sliced
  • 1 medium sweet pepper sliced
  • 2 tbsps Bajan seasoning
  • 1 tbsp Anchor Butter

Macaroni Pie Ingredients

  • 400g macaroni
  • 250g Anchor New Zealand Cheddar Cheese
  • 1 cup milk
  • ½ pot spoon yellow mustard
  • 1 medium onion, finely chopped
  • 3 tsp flour
  • 1 tsp black pepper
  • Handful bread crumbs
  • 2 oz Anchor Butter

Directions

  1. Fish StewSoak fish with lime and salt, about 10 mins. Rinse fish carefully, drain and pat dry with a paper towel. Place fish in a bowl then add salt, garlic, ginger, thyme, and black pepper, Bajan seasoning, and pepper to taste, mix well and leave about 30 mins in the fridge or overnight

    In a large skillet, heat oil and coat fish with flour, fry both sides for 2-3 mins, remove fish on a paper towel and drain oil. Leave about 3 tsp of oil and 1 tbsp Anchor Butter and heat on medium flame then add onion, scotch bonnet paper, garlic, ginger, Bajan seasoning, and thyme. Sauté until onion is tender (about 2 mins or more), keep stirring to avoid burning, add tomato and continue stirring and let it simmer for 5 mins. Add 1 cup of water. Finally, add sweet pepper and fish, let it simmer for another 5 mins or more.  Adjust seasoning and thickness of stew

  2. Method for Macaroni Fish PieBoil macaroni as directed on the packet, rinse under water, drain them add mustard and rub into macaroni, set aside

    In a pot add butter until it melts. Add flour and cook for about 2-3 mins, lower heat and add milk, then add onions, black pepper and mix it well. Add half block grated cheese, and turn off the stove

    In a greased baking dish add half the macaroni mixture, then add fish stew evenly on the macaroni then put the last layer on top of the fish stew

    Grate the other half of the cheese on top, and sprinkle with bread crumbs. Bake for 1 hr @ 350 degrees

  3. Serve immediately
