Creamy Broccoli and Carrot Soup

Ingredients

  • 2 cups of chopped broccoli florets
  • 2 cups of grated carrots
  • 4 tablespoons of Anchor Salted Butter
  • 1 large onion cubed
  • 2 cloves of grated garlic
  • 4 tablespoons of flour
  • 1 chopped pimento
  • 1 Bouillon cube
  • 1 Anchor Cooking Cream 200ml
  • 1 cup of grated Anchor Cheddar Cheese
  • Salt and black pepper to taste

Directions

  1. In a saucepan, melt Anchor Salted Butter on low heat. Add onions, garlic, carrots, and pimento
  2. Add broccoli florets. When soft, add flour. Thoroughly stir to avoid flour frying or sticking
  3. Stir veg while adding Anchor Cooking Cream to saucepan Add bouillon cube, Anchor Cheddar Cheese, black pepper, and salt to taste
  4. Continue mixing until consistency is to your liking
  5. Immediately remove from heat and serve with a side of garlic bread for dipping
