Ingredients

  • 8oz Anchor Butter
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 1 1/2 tsp mixed essence
  • 1 3/4 lbs flour
  • 1 1/2 tsp cinnamon powder
  • 1/4 tsp nutmeg powder
  • 1/2 cup mixed glazed fruit
  • 1/2 cup raisins
  • 2 lbs shredded coconut

Directions

  1. Preheat oven to 350°F
  2. In a bowl, cream Anchor Butter and both sugars
  3. Add vanilla and set aside
  4. In another bowl, mix together flour, cinnamon, nutmeg, mixed fruit, raisins, and coconut
  5. Add dry ingredients to wet in quarters. The mixture will be firm, so don’t panic
  6. Place half of the dough mixture onto your work surface and roll into a 1 1/2 inch thick log
  7. Once rolled out, break 1 to 1 1/2 inch thick pieces of dough off of log and place onto a greased baking dish
  8. Another option would be to “drop” spoonfuls of dough onto a greased baking dish
  9. Bake for 30 minutes
