Ingredients
- 8oz Anchor Butter
- 1 cup granulated sugar
- 1 cup brown sugar
- 1 1/2 tsp mixed essence
- 1 3/4 lbs flour
- 1 1/2 tsp cinnamon powder
- 1/4 tsp nutmeg powder
- 1/2 cup mixed glazed fruit
- 1/2 cup raisins
- 2 lbs shredded coconut
Directions
- Preheat oven to 350°F
- In a bowl, cream Anchor Butter and both sugars
- Add vanilla and set aside
- In another bowl, mix together flour, cinnamon, nutmeg, mixed fruit, raisins, and coconut
- Add dry ingredients to wet in quarters. The mixture will be firm, so don’t panic
- Place half of the dough mixture onto your work surface and roll into a 1 1/2 inch thick log
- Once rolled out, break 1 to 1 1/2 inch thick pieces of dough off of log and place onto a greased baking dish
- Another option would be to “drop” spoonfuls of dough onto a greased baking dish
- Bake for 30 minutes
