Ingredients
- 2 small potatoes, diced
- 4 large eggs
- 1/4 cup Anchor Cooking Cream
- 1 tsp hot sauce (optional)
- 1 tbsp Anchor Salted Butter
- 3 Italian sausage links, casing removed
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 2 pimento peppers, diced
- 1 cup shredded anchor cheddar cheese, divided
- 2 tbsp chopped fresh
- As desired, parsley leaves
- As desired, salt
- As desired, black pepper
Directions
- Preheat oven to 350°F. Lightly coat a 9” baking dish with non-stick spray.
- In a microwave-safe bowl, place potatoes and 1/4 cup water. Cover and cook in the microwave for 4-5 mins, or until tender; drain well, set aside.
- In a large bowl, whisk eggs, Anchor Cooking Cream, and hot sauce; season with salt and pepper set aside.
- Heat Anchor Salted Butter in a large skillet over medium-high heat. Add Italian sausage cook until browned, make sure to crumble the sausage as it cooks; drain excess fat. Stir in bell peppers, pimentos and potatoes cook until tender.
- Remove from heat. Stir in 1/2 cup Anchor Cheddar Cheese until well combined.
- Place sausage mixture evenly into baking dish. Pour egg mixture evenly over top, sprinkle with remaining Anchor Cheddar Cheese.
- Place into oven, bake for 35-40 mins, or until the eggs are firm.
- Garnish with chopped fresh parsley leaves.
