Ingredients
- 1 300g or 1 8oz package of elbow macaroni
- 2 tbsp Anchor Butter
- 2 tsp salt
- 1 tbsp white pepper
- 3 cups Anchor New Zealand Vegetarian Cheddar Cheese
- 1/4 cup onion, finely chopped
- 1/4 cup sweet pepper, finely chopped
- 2 cups of milk
- 1 tbsp hot sauce or cayenne pepper
- 3 tbsp ketchup
- 1 tbsp yellow mustard
- 1/2 cup Anchor New Zealand Vegetarian Cheddar Cheese
- 2 tbsp flour
- 2 tbsp heavy cream
- 1 tbsp all-purpose seasoning
- 3 tbsp Panko bread crumbs
Directions
- Preheat oven to 350 degrees
- Use medium-sized saucepan, add salt and bring water to a boil. Add macaroni and cook uncovered until tender (do not overcook or cook according to instructions on package)
- Drain macaroni and pour into a bowl
- Grate cheese and add breadcrumbs to 1/2 cup of cheese set aside
- In a separate pan on medium heat, add butter until melted. Add onions, peppers, and salt and fry until tender
- Add flour, and using a whisk, mix until all lumps from the flour are smooth. Cook for about 2-3 minutes, continue to stir until it becomes a smooth paste
- Add milk and heavy cream and whisk until well blended. Cook for about 4 mins until it becomes thick. When it begins to bubble, remove from stove
- Add mustard, ketchup, all-purpose seasoning, and pepper sauce
- Add cheese sauce to pasta
- Pour pasta into a greased 9×13 baking dish and top with 1/2 cup grated Anchor Cheese and breadcrumb mix
- Bake for 35-45 minutes, or until golden brown
- Remove from oven and cool before serving
