Cheesy Black Eyed Peas Dip

Ingredients

  • 1 cup Anchor Cheddar Cheese, grated
  • 8 ounces Anchor Cream Cheese
  • 1 small onion, diced
  • 1 small sweet pepper, red or green, seeded and diced
  • 1 tablespoon mayonnaise
  • 1 teaspoon mustard
  • 1 can black-eyed peas, drained and rinsed
  • 1/4 teaspoon cayenne pepper or pepper sauce
  • 1 teaspoon fresh green seasoning
  • 1 teaspoon vegetable oil
  • Salt and black pepper, to taste
  • A few dashes of Worcestershire sauce
  • Extra grated cheddar cheese

Directions

  1. In a bowl, mix together the Anchor Cheeses, mayonnaise, mustard, and a pinch of salt and black pepper
  2. Heat the vegetable oil in a small saute pan. Fry the onions, sweet peppers and green seasoning, just until the peppers begin to soften. While cooking, season with a little salt, black pepper and cayenne pepper. Let cool for 2 minutes. Add to the cheese mixture and mix well
  3. Add the black eye peas and mix well
  4. Preheat oven to 400 F. Lightly spray a baking dish with cooking spray. Put the mixture in the dish, smoothing the top with a spatula. Sprinkle with the extra grated cheese
  5. Bake for 15-20 minutes or until the top is golden brown. Remove and serve with choice of chips, vegetables or crisp bread/baguette slices
