Ingredients
- 2 cups flour
- 4 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup finely chopped ham
- 1 cup grated Anchor Cheddar Cheese
- 1/4 cup finely chopped mushrooms
- 1 small red sweet pepper, finely chopped
- 1 tablespoon chopped chives
- 2 tablespoons chopped pimentos
- 4 ounces Anchor Unsalted Butter, melted
- 1 cup milk
- 1 egg, lightly whisked
- Garnish parsley and chopped chive
Directions
- Preheat the oven to 400 degrees (Fahrenheit). Grease a 12-cup muffin tin
- Combine the flour, baking powder, salt, ham, Anchor Cheddar Cheese, mushrooms, sweet peppers, chives and pimentos in a large bowl and make a well in the center
- Pour in the Anchor Unsalted Butter, milk and egg. Mix until combined. Spoon into prepared muffin cups
- Bake for 12-15 minutes until golden brown and firm to the touch. Remove from tins and garnish
