Ingredients
- 1/2 tsp baking powder
- 6 cups flour
- 1 (454gm) anchor salted butter
- 2 cups water
- 1 cup vegetable oil
- 2 grated carrots
- 4 grated potatoes
- 4 pimento peppers (finely chopped)
- 3 hot peppers (finely chopped)
- 1 large grated onion
- 1tbsp ground geera
- 2 cloves grated garlic
- 1/2 tsp salt
- 1 (500gm) anchor vegetarian cheddar cheese
Directions
- Mix baking powder and flour together.
- Add 1 tbsp. Anchor Salted Butter and water to flour. Knead until soft.
- Form dough into 6 3” round balls.
- Melt remaining Anchor Salted Butter and mix with oil.
- Roll out each ball of dough and apply Anchor Salted Butter and oil mixture to surface.
- Fold dough into semi-circle then fold dough into a quarter. Allow to rest for 5-10 minutes.
- Combine: carrots, potato, pimento, hot pepper, onions, geera, garlic and salt. Mix well and set aside.
- Roll out first dough again and spread 1/3 of vegetable mixture on top.
- Place on heated tawah or baking stone then add grated Anchor Vegetarian Cheddar Cheese. Cover with a second rolled ball of dough.
- Press edges together until sealed and cook on low heat for 2-3 minutes.
- Carefully turn over and cook the other side.
