Date Cake

Ingredients

250 grams dates (pitted and chopped)
1 tsp Baking soda
1-1 1/2 cup boiling water
2 cups Flour (Sifted)
2  eggs (room temp)
125 grams Butter (softened)
1/2 cup Brown sugar
1 tsp Vanilla extract

Glaze:
3 Tbsp Honey
25-30 grams Butter
50 grams mixed chopped nuts

Directions

  • Preheat oven to 180 degree
  • Grease a cake pan and line its base with parchment paper
  • in a bowl, add the dates along with the baking soda, set aside till dates are soft (about 30 mins)
  • mix the butter, sugar and vanilla using an electric mixer until they turn pale and are creamy in texture
  • add 1 egg at a time
  • then add the dates and shifted flour
  • mix well
  • add the mixture into the cake pan
  • bake for 40-45 mins until it’s cooked and a skewer can be inserted and comes out clean
  • allow to rest for 10 mins, then place on a rack

For the Glaze

  • add the butter and honey in a small pan
  • bring to a boil, stirring till the butter melts
  • allow boiling for less than a min
  • remove from heat and add the mixed chopped nuts and finally spoon it over the cake
