Creamy Cheddar Cheese Paste

Ingredients

  • 2 cups Anchor Cheddar Cheese
  • 1 garlic
  • 2 tsps Roland dijon mustard (grained with wine)
  • 3 tbsps mayonnaise
  • 1 tsp black pepper
  • 1/4 tsp red pepper flakes
  • 1/4 tsp cayenne pepper
  • 1 tbsp of finely chopped chives

Directions

  1. Grate the cheese (I prefer to grate my cheese on the bigger side of the grater as it gives a better consistency for my cheese paste recipe)
  2. Add mayonnaise and dijon mustard, and mix until it is of a buttery texture
  3. Grate the garlic and combine with the mixture
  4. Add the black pepper, red pepper flakes and chives and combine
  5. Garnish with cayenne pepper and finely chopped chives
  6. Serve with Dixie crackers (my personal favorite) or bread
